Three generations in the same room, in San Giovanni. Carbonara, slow-braised beef, artichokes when they are in season.

Ennio opened two rooms further down the street in 1964, with six tables and a menu written out by hand every morning.
We still write it by hand. The garofolato recipe is his, unchanged.

Since 1964 we have rebuilt the kitchen once and replaced the chairs once. The oven is still the one from 1972.

The menu changes with the seasons. These do not.

Rigatoni, crisp guanciale, egg and pecorino. Never cream.
